1. Chicken Fettucine with Basil Pesto
Ingredients:
3 Thinned Out Chicken Breasts.
1 Tsp Salt and Pepper to Taste.
400g Boiled Fettuccine.
¼ Cup Chicken Broth.
¼ Cup Extra Virgin Olive Oil.
3 Garlic Cloves.
2 Cups Chopped Basil Leaves.
1/3 Cup Chopped Pine Nuts.
½ Cup Grated Parmesan.
Pan-fry your chicken breasts in a tablespoon of canola oil with salt and pepper to taste. Once cooked, remove from the pan, and cut into thin slices. While your chicken cools down, make your basil pesto. Add chopped basil leaves, pine nuts, garlic cloves, grated parmesan, and extra virgin olive oil to the food processor and grind. Once a smooth and creamy texture is achieved, remove it from the processor, and add to the pan you cooked your chicken in. Pour chicken broth to dilute the sauce and let simmer for 3-5 minutes. Add in your boiled Fettuccine and cooked chicken to the sauce and serve with grated parmesan.

2. Instant Pot Sausage and Peppers
Ingredients:
1 Lb Italian Sausage Links.
3 Red and Yellow Bell Peppers.
1 Tsp Salt and Pepper to Taste.
1 Tsp Red Pepper Flakes
1 Tbsp Oregano.
2 Tbsp Olive Oil.
2 Tbsp Tomato Paste.
1 Tbsp Minced Garlic.
¾ Cup Shredded Mozzarella.
Heat up olive oil in a pan over low-medium heat. Add in Italian sausage and peppers to cook, along with salt and pepper to taste. Once the meat is cooked, add tomato paste and minced garlic. Sprinkle red pepper flakes and oregano and let the pot simmer for 2-3 minutes. Serve the Italian sausages in brioche buns, topped with bell peppers and shredded mozzarella for a burst of cheese.

3. Grilled Ricotta Bruschetta with Sweet Cherry Tomatoes
Ingredients:
4 Slices Rye Sourdough.
1 Cup Ricotta Cheese.
1 Tsp Dried Oregano
1 Tsp Dried Thyme
2 Tsp Caster Sugar.
1 Tbsp Balsamic Vinegar.
2 Tbsp Olive Oil.
1 Garlic Clove, Crushed.
1 Cup Cherry Tomatoes.
½ Cup Basil Leaves.
Preheat the grill to medium-high and toast the rye sourdough until golden brown on each side. While the bread grills, sautée cherry tomatoes and garlic cloves in olive oil on low heat. Set aside to cool. Combine ricotta cheese, dried herbs, and caster sugar and soak in olive oil for 3-5 minutes. Once done, spread the ricotta mix on toasted sourdough and top with cherry tomatoes and crushed garlic.
